    Heat extra-virgin olive oil in a large pot over medium heat. Add yellow onion , carrots , celery ribs , sea salt , and several grinds of freshly ground black pepper , and cook, stirring occasionally, for ⏱️ 8 minutes , until the vegetables begin to soften.
